Cornucopia Salad

This is by FAR one of my most FAVORITE salads! Included you will find ingredients and directions for a salad dressing, but please use it sparingly on the salad. With such an abundance of fruit and varieties of lettuce, this salad packs more flavor than you realize… that is, until you take your first bite. ENJOY!

Cornucopia Salad

Prep time: 15 minutes

Cook time: 5 minutes (Almonds)

Yield: 12 side servings/ 6 main servings


1/4 c Silvered Almonds

1 TBSP Sugar

1 head Green Leaf Lettuce, Torn into pieces

1 head Romaine Lettuce, Torn into pieces

1 c Chopped Celery

1 (11-oz) can Mandarin Oranges, drained

2 Avocados, cut into chunks

2 Apples, diced

1/2 c Dried Cranberries

1/2 c Crumbled Blue Cheese


1/4 c Sugar

1 tsp Grated Onion

1/2 tsp Salt

1 c Vegetable Oil

1/3 c Apple Cider Vinegar

1 tsp Dry Mustard

3/4 tsp Poppy Seeds


Combine dressing ingredients and refrigerate until ready to use. Caramelize silvered almonds by mixing sugar in a small skillet and stirring constantly over low heat until lightly browned. Spread on foil to cool, then break into pieces. Toss salad, almonds and dressing just prior to serving.

Tip: Know you won’t have time to caramelize the silvered almonds?ย  There are many pre-made bagged varieties carried in most grocery stores today. These almonds can be found as “end caps” in the produce section or in the bake goods isle near the chocolate chips. Buying the pre-made almonds will cost more, but will certainly save you time in the kitchen.
